Muddy review: STACC, Ilfracombe

Did someone say Lemon & Raspberry Meringue Tart and Dulce De Leche Brownie? Ilfracombe's new cafe & patisserie is speaking our language.

THE LOWDOWN

Sugar addicts rejoice! STACC is a new patisserie in Ilfracombe, a must-visit when exploring the area. Unlike anything North Devon has seen before, STACC offers high-quality patisserie, handmade by pastry chef Bronwen who has worked for notable companies, such as Ladurée and Lily Vanilli. 

With 8+ years in the pastry world under her belt, Bronwen has perfected her craft, creating incredible treats that look phenomenal and taste exquisite. And now she’s sharing them with the lucky folks of North Devon. 

THE LOCATION

Run by Bronwen and Alex (and with a helping hand from their dachshund Betty), STACC – as in ‘stack’ for layer cake – was born with the desire to create a fun, vibrant cafe offering Ilfracombe locals somewhere exciting and fresh. 

Located right on The Promenade, it’s in a perfect spot for locals and tourists alike. Overlooking the sea, you can pick up coffee and cake-to-go on your lockdown walk and when restrictions finally ease, STACC have the capacity for outside seating so you can enjoy a delicious treat with fabulous views.

THE VIBE 

Fun and inviting. While the quality of the products is high-end, Bronwen and Alex don’t want the vibe to be too ‘stuffy’ or pretentious. Bright pinks, blues and yellows adorn the walls with dried flowers and houseplants dotted around the place (SO Instagrammable!). It’s a breath of fresh air, with a real city vibe. 

Also, expect to see Betty (above) running around the place too, she’s such a cutie and adds even more glam to the place. 

SCOFF & QUAFF

Due to current lockdown restrictions STACC are currently offering take-away only service, Thursday-Sunday, where you can purchase hot drinks and whatever baked goods are on offer on the day. 

Coffee is from artisanal company Allpress and everything baked is made in-house using the finest quality ingredients. With just a two-person team, the menu is small but the ethos is quality over quantity. 

Each week, items on offer are based on seasonality, what customer favourites are and Bronwen’s creativity. The best-selling Lemon & Raspberry Meringue Tart is a firm favourite with customers and other items include seasonal tarts, brownies and layer cakes. 

When I visited, I tried the best-selling Lemon & Raspberry Meringue Tart, Hazelnut Chocolate Praline Tart and Dulce De Leche Brownie (yes, I have a sweet tooth!).

The Lemon and Raspberry Meringue tart is a sweet pastry shell, with a sharp raspberry coulis, lemon sponge and a tangy lemon curd, with a torched Swiss meringue top. Perfectly balanced with a sharp citrus kick. 

Bronwen’s Chocolate Hazelnut Tart is a choc-lover’s dream with chocolate sweet pastry shell, hazelnut praline, chocolate sponge and a thick and creamy chocolate ganache. OOFT. 

The brownie, made with Callebaut chocolate, a luxury Belgian chocolate brand, was perfectly fudgy and had a crackly top – just how a brownie should be. 

When they can, STACC wants to do cocktails in the evening and extend the range of food options available, so keep a lookout on their socials for any exciting announcements. 

THE MUDDY VERDICT

An exciting new addition to Ilfracombe which despite only opening in December last year, has generated a lot of local support and with such good quality products on offer, it’s not hard to see why. It would be criminal not to make a beeline for STACC when visiting the area, their bakes are too tasty to miss. Plus, you may get to meet Betty which is just the cherry on top.

Good for: Those of you who go googly-eyed for anything sugary! The quality of the bakes are amazing but they also look incredible too, so if you appreciate both, STACC is for you. 

Not for: People who say they’d rather have a starter, than a dessert. This is for bonafide sweet teeth! 

The damage: Tarts are £4 each, brownies are £3 and a latte is £2.90.

    I’m a local and after coming across your amazing patisserie I’m absolutely blown away by how beautifully crafted your cakes and tarts look and I’ve already showed my partner the pics and we both can’t wait to try them out from two very local locals 😃

    Can’t wait to try out the beautiful cakes on offer here when we’re allowed to visit Ilfracombe again.
    I think your unhelpful spellchecker might have incorrectly made a typo in Bronwen’s biography. Should it not be Ladurée?
